You’d be surprised what “they” put wheat gluten into. It is in pudding mix, salad dressing, canned soup, all sorts of breads and crackers, etc. Currently, there are no laws requiring most food manufacturers to put on their labels the source of their wheat gluten (or any other ingredients for that matter. A few exceptions — bagged salad producers have to specify if ingredients come from another country. I had a nice chat this afternoon with someone at Campbell’s Soup, who informed me that they bought all of their wheat gluten from domestic producers and tested each batch before using it. I sure hope she was being truthful, but have no reason to believe she was not.

Thanks for that. I’ll start looking at the labels. I’ve never added gluten to my homemade chicken noodle soup, so why should they.
