Maybe for some, polenta is a way to be fancy, but since I'm from a northern Italian family (from a little place way up in the Italian alps near Switzerland), I grew up on polenta (and the word polenta) and never saw it on a fancy restaurant menu until I was in my 30s. I also grew up on bagna cauda, spingiuni, cappelletti, and a whole lot more good eating you've probably never heard of.
