I thought I understood the offsides rule-if the attacking team brings the ball across midfield, they cant be offsides. Thats how I thought it was. It appears to be different..

It IS different. The last field player of the defending team must be on the same height of the field as the player of the attacking team who gets the pass from his teammate. There´s an imaginary line - if the attacker is beyond that line, a possible goal won´t count and the defending team gets the ball.
