Kim probably has a drug problem which is the reason for embezzlement. Working "self-employed" would be the logical consequence of getting caught for embezzling and for the probable wage garnishments that follow.

It's now clear why Kim did not try to drop Mangum off at the police station and tried to palm her off to the Kroger guard. And why she called 911 to sic the cops on the guys and then sped away.

She must have had an arrest warrant out for her probation violation and wanted to avoid the authorities at all costs.
