I tried every diet in sight. After I retired from the Army, I quit running 5 miles a day because of bum knees. I sat on my lazy butt and gained 80 pounds. Going from 195 to 275 in a few short years. Finally, tired of being fat, overweight, high blood pressure and drugs to control it, poor sleeping, pain and all associated with being overweight, my wife who was up to 168 on her 5-1 frame, decided to get off our lazy butts and do something.

We decided to try low fat. Everything I read said most average Americans eat 65-100 plus grams of fat per day. One Whopper meal with frys gets you about 85-90 of those grams. From my readings on the Internet, it said that you should eat no more than 30 grams of fat a day if you are active. We decided to cut it to 15 and go from there. I also read that you need 6-8 grams of fat per day just to keep your body "greased" up to do its work.

So, off we went on a low fat diet. Did not count calories as low fat means low calories. We just ate in moderation. The first month we did nothing physical. After a month, I had lost 30 pounds with no extra exercise!! My wife lost 15 pounds. Then we started walking a mile, adding on a little more each day, building up. Soon we were walking several miles. Then I got back into running, but my knees started killing me again.

So, we searched for a new "sport" to do. We got back into cycling. We bought new bikes got out on the road and starting riding. The first year I rode 3,500 miles. The second year 8,000 and last year 9,000 miles. We ride on trainers indoors during bad weather and short days of daylight in the winter. Yesterday I rode 65 miles!!! in just over 4 hours with bunches of hills, some over 1 mile in length at over 6 to 8% grade.

We continue the low fat diet along with our physical exercise. This morning, I weighted 156 pounds. My wife weighted 104. I have lost over 120 pounds and my wife 64 pounds. At age 55, I am healthier than I was in my 30s and 40s. LOW FAT works when combined with proper exercise and watching your diet. We don't eat pizza, frys, hamburgers, greasy foods anymore. We actually eat good foods, greens, fruits, etc.

I am so sick of winter. Today is the first day of spring, for crying out loud! But you know how IL is, there will be one or two weeks where everyday the temp. jumps up 5 degrees and it will be 90 and humid before we know it.

Spicy Chicken Tenders

Serves 4.

1 lb. skinless chicken breast tenders
2 tsp. cumin
2 tsp chili powder
1/2 tsp salt
Vegetable oil spray
Low-fat Ranch dressing

Combine cumin, chili powder and salt. Coat chicken breast pieces and set aside for 5 minutes to set. Spray broiler pan with vegetable oil spray and arrange tenders then spray them on top with the vegetable oil spray. Place 6 inches from the broiler in your oven for 5 minutes. Turn them over and broil an additional couple of minutes until done.

Serve with the low fat dip. Pretty tasty, quick healthy!

It will come off. Don't give up. For some of us, our body goes through a period of shock and not much will happen, but then, all of a sudden, wham! It'll start coming off and you will be pleased with your progress. Of course, we all plateau a little from time to time.
