The Irish make gravy too. They add butter at the end before serving. And the best corned beef I ever ate (the Irish kind) was made by an FBI.
Can't leave this thread without commenting on Taylor Ham/Taylor Pork Roll. I first had this on a boyfriend's boat out chumming for bluefish on the Atlantic. I don't think that's the only reason I love it, though. If you have the patience to fry it slowly, like bacon, it makes the most unbelievable sandwich on white bread known to man. All the NYC delis have stopped stocking it, one by one, probably because nobody here knows what it is any more. But you can order it on the Internet.
