Freepers, I would like your favorite chili recipes.

I know many of these recipes are top secret, but I will be happy to settle for those in the public domain.:-)

Try including some mole powder or paste next time. It usually has peppers, raisins, chocolate and spices plus other flavors like peanut butter. It depends on the version you buy.

In any case, dark chocolate and/or instant coffee add an interesting bitterness. A good English bitter or stout has the same effect.

I think the most critical ingredient is FRESH cumin. I like to grind the seeds just before putting them in the chili, and add them at various times during the boil. I always add some powdered New Mexico chili and fresh cumin about 5 minutes before taking the chili off the heat.

The real secret is knowing the difference between powdered chilies and chili powder. If you use chili powder that comes out of a can, your chili will taste like it came out of a can.

For those in the Northeast who have never tasted anything but spaghetti sauce with kidney beans, I recommend the following interim solution:

Go to the store and buy a Carroll Shelby or Wick Fowler chili kit. Follow the instructions to the letter. Pay careful attention to the amount of powdered chilies that mix with only two pounds of meat. You will find that the sauce is NOT a tomato sauce, but a pepper sauce. The redness comes from the chilies, NOT the tomatoes.

These kits are reasonably good, but, they are to great chili, what spaghetti sauce from a jar is to great spaghetti sauce. The real thing is an order of magnitude better.

Real Cincinnati chili is interesting too. It is full of cinnamon and nutmeg and is poured over spaghetti. It is not to be confused with real chili, but is worth a try.

Trillian's Venison Chili

3 pounds ground Venison
3 tablespoons olive oil
1 cup chopped red bell pepper
1 cup chopped onion
1/2 teaspoon crushed red pepper
1 garlic clove, minced
1 tablespoon chili powder
1 1/2 teaspoons ground cumin
1 1/2 teaspoons oregano
1 28-oz can diced tomatoes
1 12-oz can tomato paste
1 12-oz bottle of your favorite beer
2 15-oz cans of your favorite brand of chili beans

Cook venison until browned. Remove from heat and drain.

Put olive oil into a stockpot and heat over medium heat. Add bell pepper, onion, red pepper, and garlic and sauté 8 minutes or until vegetables are tender. Return the cooked meat to the pot and add remaining ingredients. Bring to a boil then reduce heat, cover and simmer for 1 hour.

Makes 12 Servings

I like to serve this with grated cheddar cheese and sour cream (optional)

Glad I put a lot of my recipes on word.. they're easier to copy and paste that way :)

Love to, Keith, but I'm completely jammed up w/the new website, probably until summertime. After we're completely up and running smoothly, count me in -- I need a good road trip in any event (as opposed to the road shows we've been doing).
