Here's a little test next time you go there and get wings.

Take 4 or 5 paper towels. Take 1 wing and wrap it in the paper towels.

Now squeeze it in your hand and wring out the grease.

The grease is 50% of the weight, and if the fryer hasn't been cleaned lately... 8^(
