"... if I edit and help you publish and promote your book of poetry and prose ..." I don't think anybody's going to be able to absolve me of my editorial duties, more's the pity. It's not something I look forward to. I've been printing out my poems, in order to try to physically arrange them in some kind of order for the two books of Poetry I envision. Ye Gods!
What a mess o' rhymin'!
Where I really fall down and need help is with marketing. That too, is something which does not come naturally to me, yet publication without promotion is a wasted effort.
I think the poetry books are in serious need of illustration, too. Possibly my best hope for that is a local artist who is quite talented, but who I believe thinks that I am an irresponsible reprobate.
At least I know he's a good judge of character. If I can get him to overcome his scruples, I'm sure we could collaborate effectively.
Then it's just a matter of getting into the public eye. Maybe painfully.

We need to discuss this marketing thing further. I'm no professional, but I do have a lot of talent in the promotional/marketing field (I just can't sell my own work, lol!) I've been helping a friend with her self-publishing venture recently, too (and there was a girl in dire need of an editor, not a consummate professional like yourself!)
Anyway, yeah... we must discuss this idea further, and soon...Right now, though, I gotta dash - computer battery's running flat on me, and it's after midnight on this side of the planet.
