I kinda figured that Apple would not make this move without there being a way to keep their stuff largely proprietary.

Wonder if anyone has any Linux bootstrap code or drivers for this.

See ELILO - a bootstrapper for Itanium and X86 platforms.

Red Hat supported EFI (on Itanium) since release 7.2 at least.

Also see Intel's page on EFI Presentations, including this one in a PDF: Next Generation EFI Operating System “Linux & EFI” and some WMVs (which should play in XINE).
