I just like baking - it's always been just about my favorite part of Christmas. Honestly, I'm sure everyone will have far more than enough sugar-laden goodies without my sending them more, but...it makes me feel better, and surely they won't go to waste - just may take a while to get gone!
First batch of fudge done! And that may be the only batch. I was going to make a batch with nuts and a batch without, but I'm pretty sure everyone likes nuts, and this recipe made three pounds of fudge! I usually use my grandma's recipe, which is one of the old kind you have to beat until it "fudges". It's rich and creamy and wonderful, but also finicky - even at a normal altitude, we had times when it would turn out syrup or too dry. I have a feeling it'd really act funny here. So...I just used the Fantasy Fudge recipe from the back of a jar of marshmallow fluff. Shhhh! Don't tell!
I already ate two cookies. So did PE and Karateboy. The pineapple, we cut before dinner. I had a quarter of it as well. Bow, I am trying really hard to not eat too much of it cause I am a allergic to citrus. (but it's so yummy, and the more fruit I eat, the fewer cookies I'll eat)
We havebeen making peanut butter fudge. Wow, talk about rich! It's easy, and no-bake. We got the recipe from Cub Scouts.
Got recipe? Is it a HUGH batch?
Hm...maybe I can send half peanut butter fudge and half chocolate. Would it ship well, do you think?
The cookies are ready. :-D
Springerle, BTW, is lembas. Or vice versa.
It is not a hugh recipe, but the richness requires bite-sized squares. It makes about 1 lb per recipe.
3 Tbs light Karo syrup
3 heaping Tbs peanut butter (your choice creamy or crunchy)
2 tsp vanilla
abt 2 c. powdered sugar
add ingredients in order, and stir together before adding the sugar. When adding the sugar, stir in small amounts at a time until you get the desired consistency. Then roll onto wax paper and shape. Easy as 1-2-3. A 7 yr old (karateboy) can do it! (and he loves it.)
BTW, we have had better results using natural peanut butter, butI don't think it really matters.
I have natural peanut butter...may try it!
*sigh* I'm starting the springerly and find I'm about a bit less than a quarter cup short of sugar. I'd like to think it's not gonna matter, but maybe I should run out for more.
But it's cold. And dark.
You don't have a neighbor who would spare it?
I don't really know anyone...and I doubt Mr. Beepy keeps sugar around.
I need to get some anyway, if I'm gonna make other cookies tomorrow. The grocery is about two blocks away, so I'm just bein' a sissy. I'm good at that...
Well, ~not~ Mr. Beepy.
I figured your across-the-hall neighbor might be someone you have a "hi and bye" relationship with. Someone who could be easily bribed out of a cup of sugar by the promise of cookies and fudge. ;-)
I've yet to watch it the whole way through!
I've seen the original "Vacation" dozens of times though. :-D
I'm gonna call it a night early, folks.
See you tomorrow!
You're right...I probably coulda done that, come to think of it.
Oh well. Now I have all I need, and it was vey quiet out there. Not such a bad time to get it over with after all.
Evenin'
Got the holiday shrubbery up. Found one that was nice, and not too expensive. But here's something to add to y'all's "let's remind Corin of this." However, this time, the reminder comes just after Christmas.
Remind me to ~not~ throw out stuff with a plan to buy something new for next year.
I knew about the tree and just didn't have the cash handy to buy a new fake one. We might consider just goin' with a live one fer a few years and put it up the week after the show.
But, I also ditched the stocking hangers. We usually put our Santa collection on the mantle, so the angel stocking holders didn't fit. I have one Santa holder, and I put the angel holders in the church yard sale. Hmmmm...maybe I'll just use cup hooks...
I think fake trees are just wrong anyway :~D
RE: Santa collection... Last night we drove by a house that had about two ~dozen~ lit plastic Santas in the yard.
"I don't know why they call this stuff Hamburger Helper. It does just fine by itself."
