Thought I'd toss Earl Campbell as the most classy (not in a showy, stuffy way). He was calm and quiet yet absolutely crushed defenders on the field. Compare him to the drugged up doofusses on the NFL fields these days.
Least classy: 95% of the players today.
One note: my father saw Archie Manning play high school football. Said he was the most dominant player he had ever seen at that level.
