As a former snake owner, that's not too gross, but I will be careful; All the shelter/rescue places here seem to have taken in animals from Louisiana and don't have much room. Do they instinctively use a litterbox, or is there training involved?

It depends,
their Mama usually shows them. Seems most cats I know do OK and don't need help.
My advice is keep them in a small area with a small litter box they can get into. If they show ANY signs of going outside of the litter box, immediately put them in it, and they get the picture then.
Also, if the do 'go' outside the box, you can put the droppings in the box as a clue of 'this is the right place'.

Cats will instinctively use sand or dirt to eliminate in so a litter box is a substitute. They should learn fairly easily.

I can't tell you how many cats (and dogs) I've adopted over the years, LOL..... And I never had to worry one second about "training" a kitten to use a litter box. It's got to be instinctive because they seem to know exactly what that thing is for.
The minute you set it down, they'll use it.
