As a kid I loved beef brains and scrambled eggs, wasn't one bit adverse to chitin's either. Matter of fact, at hog killing time in the late fall, we utilized everything but the squeal. The scalding and scraping was the bad part, but those hickory smoked hams and bacon hanging in the smoke house through the winter more than made up for it.
