You need a really big smoker...
I've got a Brinkman water smoker... it works for a couple turkeys or a half dozen racks of pig ribs. We fruitwood smoked turkeys for Thanksgiving and Christmas. Juicy and tasty. Vacuum sealed the leftovers and threw them in the deep freezer. They're there for sandwiches. I've used the smoker to make jerky, and smoked a 15 pound sirloin overnight once... now that was some awesome beef!
