I like the tails battered and fried. But not the traditional boiled head sucking crap.

That's what it was, too. Only my wife was shelling them and giving me the deshelled tail. She was eating parts of the rest of the crawdad (since I was lookin' at that part funny).

The day my wife got her green card approved by the INS, she took me and Dad to a Chinese all you can eat buffet. A REAL Chinese food place (not American Chinese).

I got some of the shrimp, fried whole. I handed one to Dad and asked him: "Dad, have ya ever eaten anything that's looking back at cha?"

haha! Well, of course I knew he had. We had some squirrel stew my grampa made back in the 60's and he cooked it with the head intact. I can still remember that squirrel floatin' in the soup with his bug eyes lookin at us.

Squirrel should be deheaded, cleaned, and boiled till the meat falls off the bone. Then made with dumplings.
