I never cooked them but my aunt use to and she would pound the meat until it was almost paper thin and then slice it, batter it and pan fry it. The ones I watched her fix were usually turned out to be about the size of a small pizza pan when she finished pounding them. I don't know how many servings came out of each cause she would always cook up dozens of them at a time - we had big family gatherings. I do know that everyone ate their fill and there would always be some leftovers to nibble on later in the evening.
BTW, my aunts way of fixing them made them alot more tender.....much more so than if you just chopped them and made a chowder or fritters.
