I'm looking at the veg seeds in Gurneys right now. A lot say hybrid but some don't. What's the purpose?

Theoretically, the hybrids are disease resistant or faster growing or taller or "something" They are supposed to grow better, having been developed especially for your climate, your growing season, whatever. They lose something along the line though, mostly taste :)
