how does acknowleging and respecting the fact that December contains holidays from non-christian religions (such as Judaism for example) take Christ out of Christmas?

Sorry, I just don't see it. I've never understood how being open minded, inclusive, and welcoming takes anything away from me and mine.

Exactly, by all means, if you know the person is a Christian, wish them a Merry Christmas, but if you don't know that person's affiliation, just go with the generic Happy Holidays, it just makes sense.
