I salt mine down and hang them from the back porch for about a week, but everybody has a different method.

I actually prefer to pickle them, I make a nice brine with vinegar, pickling spice and hot peppers. Bring the brine to a nice rolling boil and pour over your favorite leftist, preferably living.
Let soak for at least a week. They're excellent with an ice cold beer.
