That recipe sounds good. My hubby loves eggplant parmesean and has not been having much luck making it.
Maybe I will surprise him and make it myself. Ummmm .... I hope he doesn't expect me to become the Italian cook in the family. :)

I can't imagine how difficult it must be for the families knowing their loved ones are going into harms way. God bless and comfort them

LOL - I *am* the Italian cook (literally) in the family, but you'd never know it from some of the disasters that I've had.
We just got through eating and *this* time the eggplant turned out great.
One suggestion - if your oven runs hot, back down the temp to 400 and stay close by. The slices turn brown on the bottom faster than on the top.
Also, I flipped the slices over and put them back in for about 4 more minutes. The recipe doesn't call for doing that, but it worked out just fine.

Thank you for your kind words. I'm trying not to cry (I'm sorry), but what can I say. I'll get better when the shock passes... He could have sat back - he's been to so many other countries already, but he volunteered for this particular mission and completely wants to go...
Thank God I have you guys because sometimes when I tell people, they flip it off and say stuff like "that's his job" or "he's an adult". Yes, of course, but that doesn't make it any easier on the families. I've been trying to help out the other troops and their families the last two years (my brother got back from Afghanistan about a year and a half ago), but now it's hitting home again. I have never known how wives can handle it.

I completely am blanking out if I already told you I am going to China Lake (Ridgecrest) December 2nd? My friend of 21 years is retiring from the Navy... Afraid we probably won't swing up north afterwards, but probably head back home through the Grand Canyon.
