Well hello there stranger. Good to see you.

We are having very nice weather right now, and I wish I could get out of here and enjoy it more, but things are always happening to prevent my flight. I am hoping for just 'one' day.. :(

Grannie, have you ever baked a tomato pie? I like it when I'm tired of eating them raw or in a vinegar salad. It is soooo good.


Ingredients:
1 recipe 9-inch pie crust
2 to 3 tomatoes, sliced
Your favorite spices (I use basil and parsley)
1/4 cup mayonnaise
1 cup shredded cheddar cheese


Directions:
Preheat oven at 425°F. Follow the recipe for basic pie crust, but bake the crust for only 5 minutes. Revove from oven.

Reduce oven to 400°F. Line the bottom of pie crust with sliced tomatoes, sprinkle on spices. In bowl mix mayonnaise and cheese. Spread evenly over the tomato slices, covering all the edges, (like putting on icing). Bake for 35 minutes. Can be served at once, while still hot and
bubbling.
