Good morning! I was just going to post an inquiry about how it went for you yesterday!

I don't know what capaletti is, but we are having our family lefse-making day today, and I bet it's an equivalent tradition if it involves everybody :~D

Capaletti are basicly ravioli. My mother was Italian. We make them once a year for Christmas. They are pretty work intense. Everything, pasta, and filling is made from scratch. Then I freeze them till Christmas. My two nephews and all their families always come, and of course, my kids.

Capaletti are filled with meat, ravioli are filled with cheese/spinach.

I really don't know how may mom use to do it. For alot of years she did it by herself, and had to roll the pasta dough out with a rolling pen. We have a pasta roller. I grind the meat with a hand grinder but that isn't that hard.

So what is it you are making today. I've never heard of that.
