I have created several ping lists, some are now used by others. You have received the best advice already for how to create them so I will just add one thing. Alphabetize your list as you create it. It makes it much easier to remove people who request it. I remove people as soon as they ask and always freepmail them back to confirm I have removed them.

Keeping the ping list in a notepad file is the best. I keep mine open on the task bar while I'm on FR for easy access. I also have the ping list name and standard add and remove phrase saved in it's HTML format in the same file for easy copy and paste.

As a side note, I have a list of who keeps ping lists on what subjects. I will add yours to the list. MizSterious and EdReform, if you will tell me the subjects your ping lists relate to I will add them to the list as well.
