I agree with you. We do really know so little. I just like to poke fun at scientists who'd have us believe that THEY can explain EVERYTHING with their theories.

Don't get me started on that! There was a time when the scientific orthodoxy was quite certain that all sorts of things that are commonplace today were completely impossible.
I wonder how much of what we believe now to be empirical fact will be laughed at by the schoolchildren of the world in five hundred or a thousand years?
Still, we are compelled to try, to learn, to expand the frontiers of human knowledge. We make lots of wrong turns.
