I think I'll have flaxseed pancakes for breakfast tomorrow. Been having those once a week or so.
I still need to try the almond pancakes, though! And the new recipe for pecan ones, too, eventually.
But the flax ones are just soooo easy. I've been using a recipe that's just two eggs, three tablespoons of ground flaxseed, and a tsp each of vanilla and baking powder. I usually add a tiny bit of water, too, especially since I don't like majorly fluffy pancakes. And lately I add blueberries.
They're quick and easy and good for ya!
I'm glad you like them, but you really need to try the almond flour ones...
They usually don't make it to the table...I just eat 'em while standing up, frying up the next one.
