LowCarb Mediterranean Cheese and Olive Meatballs
1) In a large bowl or a clean dry surface, blend all the ingredients with your hands and shape into 16 meatballs.
2) Place the meatballs about 2 inches apart on a baking sheet and broil, about 3 inches away from the heat until browned. Turn and brown on all sides.
You may also fry the meatballs in olive oil and use them as the base for an Italian meat sauce, which you may serve over them.
