oooh, my... you haven't had Guiness until you've had it on tap, and drawn by someone who knows what they're doing. Most beertenders can't do it right.
Pouring a proper Guiness is an art. Since there is no nitrogen pressurization allowed, it pours very slow under natural pressure.
At Kells, they make a special art of wiggling the pint just as they shut off the tap... making a shamrock shape in the top of the head. It's a thing to behold, and I have yet to see anyone else be able to do it.

I will have to see if anyone at the pubs around here knows how to do that :) And then there's the art of making a decent Shamrock Shake, which McDonald's has apparently abandoned :(
