The deer steaks I cook are just like round steak, in fact I interchange the two in recipes. Deer is much leaner than beef, so it dries out easily. That's the biggest difference.

I have a slew of them in my freezer right now.

Not this time, he brought it already cooked. We had a discussion on duck hunting and I told him how to clean one in a jiffy, boil some paraffin and dip the duck in it, when it hardens and gets cool, cut it down the breast and pull all the feathers out, including the pin feathers. Just a little 'southern' lazy hunters tip from the south.
