Okay, if the elf guy could kill a giant elephant all by himself in about two minutes, why didn't he go around and just kill all the elephants??

And how come that dwarf guy never gets to have a horse?

Can't answer the question about the oliphants.... it is right up there with "why didn't they just call the eagles just take the ring to Mount Doom?" In the book, Legolas didn't climb all over the oliphants like that... that bit of razzle-dazzle was an extra.

In the book, Gimli does not ride alone because he is too small to handle a horse, for one... and because dwarves don't know how to ride and aren't comfortable with it.

There was great wonder, and many dark and doubtful glances, among his men, when Éomer gave orders that the spare horses were to be lent to the strangers; but only Éothain dared to speak openly.
