I don’t know where you get your information about the airlines. I personally contacted Emirates Airlines today and they confirmed to fly to and from Australia, you must be vaccinated unless you have a certificate from Australia specifically saying your are exempt and the reason why.

Emirates airlines vac does not require vaccination to visit Dubai but to fly to Australia you need to be vaccinated.

As Australia prohibits non vaccinated from leaving the country without exemption probably the airline would have told that you need to be vaccinated but the airline itself does not require it.
