If you quit, then you will not have a lawsuit of wrongful termination and you cannot get unemployment.
Make them fire you. That way you will have a legal case, you can collect unemployment if worked over a year. Plus your job will have to hire a new person, train them and get them up to speed. That’s a long process and costs a lot of money.
If even 10% of your coworkers do that, then it will hurt the business. They will not be able to do it or it will be very costly. Certainly if they have to pay lawyers for lawsuits, pay unemployment, pay to search, hire and train a new employee.
Again make them fire you so you have a case. Do not quit or you will lost out big time.

You are Correct, you need to show Damages, Injury, Loss before you can even get to square one.
…or agree to get the vax on your terms; employer assumes responsibility for all medical costs for adverse reactions and lifetime support if you become unemployable. Present a legal agreement for them to sign. 15 to 20% of employees demanding just protection will make them back down.
