I think the most underappreciated restaurants and form of cooking is Portuguese. You'll have to go to a Portuguese community such as New Bedford, Mass. to find that cuisine.

When I was a kid I bucked hay back when they used to feed the hay crew. This one was owned by a Portuguese couple. It was one of the best meals in the valley. It wasn’t strictly Portuguese fair but it was all great.
