Mexican food even moreso. Mexican everyday average family table food is 100X better than the best American version, even when prepared by Mexicans. Something happens when the recipes and cooks come north. Lard as a key ingredient is just one small part.
Well about as close as I get to enjoying mexican is a Taco salad. Perhaps that’s why I don’t care for it.
That happened to me with Thai cuisine. A new Thai restaurant opened near me and I was one of the first customers. The food was excellent. A friend remarked "Wait a week; they'll be forced to tone it down for American palates." Sure enough I went there a couple weeks later and it wasn't the same. Whenever I order Thai food now, I ask them to prepare it "Thai hot". I'm sometimes not disappointed.
