Well, it is a red dye, and would completely obliterate honest smoke ring, and, the garbage “BBQ” ribs and pork you get at cheap chinese takeouts — that red color is annatto. If you want your meat to be bright red, use annatto, but that won’t make it BBQ.

I suggest you try it because beyond affecting the color of the chicken it most definitely changes the taste and especially the texture. BTW, this is frequently used in traditional Mexican cooking.

I have used it... It is good...
I make a marinate out of: Some of the pastes, olive oil, garlic, black pepper and lime use, blend in blender and brush on chicken and cook...

I brush on chicken but then put the chicken in zip lock bags, add remaining marinade, and then let sit in fridge overnight.

When I grill I add pistachio shells to the fire. It really adds a nice flavor. Years ago I was able to buy bags of compressed almond shell charcoal for a buck at the Dollar Store. The aroma was very sweet which you could also taste in the food.

achiote is used to color white rice-mexican rice (spanish rice uses saffron and is yellow:)..turns out kinda orangish throw in some peas, onions cilantro etc... looks and tastes great
