“We used an IODINE SOLUTION to sterilize them.”
I guess about everyone did burger joints years ago. In 1970-72, when I got back, I worked MacDonald’s and Kentucky Fried and they didn’t use any solution to clean. The inner workings were dismantled and it was washed with hot water and soap in a deep sink, then reassembled. Your store must have been so busy that time was a issue and they had to clean more often. Might have been a contributor to why OSHA was invented in 1970 and the FDA did more inspections from reports. Never saw either for the two years I was working.

I would dismantle the machine’s mixers and wash them in hot soapy water in the deep sink, reassemble.
Then fill the machine with very hot water, and a cup of iodine liquid, and run it thru the machine for about 15 minutes or so, refrigeration off.
The drain, refill with clear very hot water, run thru for another 15 minutes.
Repeat last step.
I was told it was for ‘bacteria count’ test by the Health Department........................
