I always wondered why some don't just keep cooking the steak on the stove top? I always do. And wonder what I am missing.

Very difficult to get a perfect medium rare steak on the stove top - which is how most people like it. I get best results by searing it in a cast iron (5 minutes a side) and then putting into a 400 degree oven until internal temp hits about 120. Then I pull it out and during the resting period it will get to around 130 degrees.
