You understand wrongly about when the "Veronica" Veil legend was supposedly created. It was on the Via de la Rosa, when Jesus stumbled and fell, a woman named "Veronica" came out of the crowd and wiped the sweat and blood from his face. When she look at her veil later, it miraculously found it had the true image of Jesus face on it. It was not after the resurrection, but a few minutes to an hour before the crucifiction.
The problem I see between the Shroud of Turin, the Veil of Veronica, and the Veil of Manoppello is the difference between the beards because they are all supposed to be captured in a short time span. Aren’t the Veil of Veronica and the Veil of Manoppello the same?
