Believe it or not, the first smoked turkey leg I've ever tried that wasn't cold, greasy, overcooked, dry, and/or gristle-laden, was from the local Renaissance Fair here this past spring. Somebody in one of those ptomaine booths actually knew how to smoke, cook, and season those things, and I gnawed it down all the way to the bone.(!)

This was at the Calhoun county fair in port lavaca. The fat was rendered and crispy. Tendons were non existent and, never mind. Yum. The ceviche was great too. Fair food. Lol
