Use a bit of cooking oil and 1 egg, a touch of milk all mixed and put in a measuring cup. Microwave a minute to minute and a half. When it quits put cheese on it and cover the cup until cheese melts. It is just the right size for an English muffin. Add a sausage patty and there you have it.

Sounds smart. Do you cover the measuring cup in the micro? I get egg splatters.

Another thing Mrs. Kit likes is (using a micro-safe bowl) drop a couple eggs in, along with cheese, salsa, onions, whatever for an omelet. Whip it with a fork, nuke for about 30 seconds, take it out whip it, put it back for another 30, keep doing this for about two minutes or however you like the eggs.

No milk though. I found out a while back that the traditional way of making scrambled with milk actually makes the eggs more dense. Either nothing, or a little bit of seltzer water instead of milk. They'll be downright fluffy.

I don’t cover it typically but maybe I should. I have done variations of Mrs. Kit’s omelet also. That seltzer deal sounds terrific.

My wife won’t do this, but when I make pancakes I put just a little bit of soda pop in the batter and I think if fluffs them nicely.
