Didn’t our elected politicians create these agencies and grant them their power? We can elect politicians that will dismantle them.

Yes, in theory we can elect pols to dismantle them.

In practice, the isn’t any personal, electoral reason for politicians to do so.

Since the administrative state relieves elected pols from making contentious decisions that could get them “unelected,” the tendency is to unconstitutionally, yet willingly assign ever more powers from congress to arbitrary bureaucrats.
