Diana Deutsch is a perceptual researcher who made discoveries about left-handedness and pitch perception.
Her more important discovery is that people who grow up speaking tonal languages like Mandarin have a greater advantage in the pitch component of musicality.
About left-handedness, her findings:
40% of the 10% of the population who are left handed, have a brain neurology that is just an opposite mirror of the 90% of right handers.
60% of left-handers, the people who have a higher proportion of perfect pitch, have mixed hand preference, in which they will switch off between hands for common tasks (switch hitters).
(My father broke his left hand, learned to write right handed, and never switched back once the arm was healed.)
Mixed-hand preference lefties have an over-active corpus callosum, the interface between brain hemispheres, the structure that is deliberately damaged in lobotomy.
They have greater communication between sides, perhaps an improper freedom of movement of impulses.
They have higher rates of perfect pitch, artistic temperament, and insanity.

Not a pure lefty though - played tennis left handed, but hockey right handed.
I used to have no problem using those “right handed” scissors..
My left thumb would end up with a red mark and it would hurt to hold the stupid instrument but I was the best cutter outer in my class and the other kids would ask me to help them ..

I have a different theory regarding ambidexterity. People who use tools often find themselves working in a space that doesn't allow them to use their dominant hand. Over time they learn to use their other hand with the same dexterity as their normally dominant hand.
If you watch welders, painters, paper hangers, iron workers, and similar you will see them display their talents using screwdrivers, socket wrenches, and power tools with ease while using either hand to get the job done.

I can’t read a note and have 0 musical ability.
My sister who is right handed generally plays piano and some other instruments pretty well by ear.

It is very easy to check your dominant side, or your eye doc can tell you which eye (dominant) looks straight, and the weak side eye follows by looking at an angle.
People who get into shooting sports learn this first, and you can google how to do it.
