We recently started salt curing pork bellies and beef briskets. The resulting bacon and pastrami are heavenly. It isn’t difficult.

I made my first pastrami this year from tri-tip. I’ve had better but was pleased with myself anyway and plan to try try again.

Which spices do you use for your Pastrami? Most recipes call for picking spice
which basically makes it Corned Beef. I've been looking for something a bit less
powerful for my second attempt.
