I also make scrapple a lot. It's about 75% corn meal mush mixed with organ meats, sage, mace, pepper, and water. You pour it into bread pans to cool and then freeze. You cut it into 3/8" thick slices and then fry crisp on each side.
Most local butchers with a kill floor will give you the organ meats for free if you reliably pick them up on kill day. Pork hearts, kidneys, livers, and calf livers, hearts, and brains work very nicely. Hog tails, feet, snouts, tounges, and heads are good too. You just need to know what to do with them.
Did you know that cabbage yields over ten tons per acre? In a ten acre field there is usually a few hundred heads left behind by the automated pickers. These are the saurkraut heads of cabbage I'm talking about. They go 10 pounds a head. Six heads and you've got all the sauerkraut and boiled cabbage you can eat during a year. The stink in the garage from fermenting the buckets of sauerkraut might put off some folks, but I love the smell.

any system that was a legacy system, not orignally designed to work across states, or with the latest ebt cards, will have legacy and interface issues.
same as in any business - new systems have to interface with old systems that never were designed to inteface with the new system, they’re held together piecemeal.

I don't believe for a minute this wasn't ordered by hussein just like he ordered the park rangers to make the little people's lives difficult. A Chicago news station said that 1 out of 6 Chicagoans had EBT cards. Ridiculous! No wonder why it's broke. BTW, the cards weren't working in Texas, too.

In the company I know the systems are just poorly designed and maintained. Everything is bottom dollar because the margins don’t support millions of dollars for new systems.
The foamy scum I scrape from the top I toss into the pig's feed and they love it. When it stops fermenting we cold pack jar it.
I love doing red cabbage and beets too. Then I pack gallon size jars of hard boiled eggs and onions with it. I add a cinnimon stick, cloves, some brown sugar, and pickling spices.
The colors are random, assigned by the map program I used to generate the pic.
