I’m not a farmer. How practical are modern farming practices in a grid-down scenario? No gasoline, no modern fertilizers, etc.

They’re not. And they aren’t even “practical” with the grid up! Modern fertilizers are actually degrading the soil to the point where it’s a lifeless powder.

In a nutshell, use animals and mulch. Not just animal manure, but have the animals on your land - they have behaviors that improve the soil, if managed correctly.
