At the Maggie's HQ, we make meat loaf the Italian way: Italian Meat Loaf Recipe. Italian-style meat loaf usually has a dash of nutmeg and/or allspice in the recipe, but that particular one does not. I do not think they make this in Italy. Maybe it's a modified meat-ball recipe, but they don't eat meatballs in Italy either. (Nor do Swedes cook Swedish Meatballs.)
Best thing about meat loaf? Meat loaf sandwiches the next day or two. White bread only, plenty of mayo."
Cuisanart a onion. Mix it with ground beef (80/20 and 93/7). Add bread crumbs, egg and lots of ketchup. Onion powder, garlic powder, salt, pepper and a bit of smoked paprika.
Cook meatloaf until meat is pink. Pour tomato sauce around the meat loaf and finsh. Fat mixes with sauce. Add ketchup to sauce, mix well and top meatloaf with that.
Sauce also goes good in the middle of a pile of mash potatoes.
I also add carrots & celery, along with the onions & peppers like the above recipe.
However, I dice all of the veggies and cook until soft in about 2-3 TBS of butter. Then, I add the butter/veggie mixture, slightly cooled, into the rest of the meatloaf mixture.
Trust me...it is REALLY good that way...but then what isn’t with extra butter...LOL!

I hate meatloaf. My momma made it every time dad was gone because she loved it.
I would rather have a straight hamburger patty to eat or a hamburger steak, but no meatloaf.
My wife made a meatloaf a few weeks ago. It tasted as bad as it did 60 years ago.
