...in a society where all material needs are met by the matter replicator why would you want to own and work in a restaurant or own and maintain a primitive mountain cabin?
I think it was (at least implied) that replicator food was somewhat flat and tasteless. I think Bones said it in the series and the movie.
What we would consider "cafeteria food"
The higher ups get the real food, not the synthetic replicator fare for the masses
So there must be a market for real food thus somebody to provide it.
Thus in this utopia, there are divisions in society.
