I wonder how crappy the sushi will end up being. Quality really matters for raw meat like sushi.
I’d guess the sushi served will be vegetarian, rather than types involving raw fish.
If they have half a brain they’ll serve it without raw fish, favoring safer ingredients like cucumber, avocado, imitation crab and cream cheese.
Remember, sushi is just the vinegared rice with whatever additional ingredients you desire. Sashimi is the raw fish. I’ve had steak & egg sushi that was delicious. If you make it at home it can be a great way to repackage leftovers.

They mentioned Calfiornia Rolls which is typically cooked crabmeat or a phony vegetarian substitute.
Most sushi rolls contain cooked fish. It’s the good stuff like Sashimi that’s raw (I’m a fan).
California Rolls are not sushi. They are imitation crab sticks, cucumber, avocado, seaweed paper, rice and sesame seeds.
They are not good quality raw fish.

Sushi starts with cooked rice. This may be cut into blocks, or spread out on a sheet of prepared seaweed (doultz for you folks in Canada). "Things" are placed on the rice. It is then rolled up and cut into bite size pieces. Best served with wasabi and ginger ~ and may include soy sauce.
As a variation try Sriracha, the world's finest hot sauce ~ manufactured in the USA from real peppers ~ exported everywhere.
Oh, yeah, rice wine vinegar! That goes in there.
Yeh, cafeterial sushi that’s been sitting in back for several hours, ought to do the kids right in. Plus, will they buy the expensive, high-quality raw fish? I suspect not.
When the kids go to the hospital and the lawsuits start they’ll go back to nuggets and dogs.
