Cyber’s friends. Too many to hoard, so we squeezed them and put them into ice cube trays. One ice cube and a bit of sugar and water makes lemonade for a year!

There’s a Chinese trick for when you have tougher and older cuts of meat, that you can use to freshen the up and tenderize them prior to marinating.
It is simplicity itself. First, thin slice the meat, then soak it in water with from a heaping teaspoon to a tablespoon of baking soda dissolved in it for an hour. If you’re doing it right, the meat should turn bright red as if it was fresh. Baking soda has a pH of 9, and its alkalinity breaks up some of the acidic bonds in the meat. Some of the fat will float to the surface.
The hard part is that you must wash the meat thoroughly after doing this, to get the baking soda flavor out. A cursory rinse won’t do.
After this, then, pat the meat dry and marinade in your favored sauce.
If you did it right, the meat will be light and tender, cook well, and won’t taste like baking soda.
Find a newspaper bin where they are tossed. I have my secret spot (enforced with a fake badge) so just get yours. However, I often just buy the coupons off the web.
