Directions:
Combine corn meal, flour, salt and pepper in large bowl.
Wet fish with water and dredge through the flour/corn meal mixture.
Heat skillet on medium high with a couple tablespoons of extra virgin olive oil for a couple minutes before adding filets to it. You want to make sure you hear the sizzle when you lay the fish on it.
Cook the fish for three minutes on each side until golden.
If you don’t like tartar sauce with your fish, try a roasted red pepper/ tomato/sweet onion dip - so fresh!

We catch these in the local creeks here on the Gold Coast. The local ponds and lakes are artificially stocked here with lots of these, but I prefer not to eat those -- no way of knowing how impregnated with pesticides/herbicides they are. Locals catch them in nets occasionally when overpopulation occurs, and then sell them to the local resturants. Look out for "locally grown" tilapia.
But the ones that have escaped into the local fresh waterways -- good eating! And despite being plant eaters, tilapia will bite on small bits of shrimp on a small hook.

I’ll give this one a try in the near future. I’ve been cooking tilapia fillets lazy-fashion :Dot with butter, put in microwave in a dish lightly covered with Saran Wrap, nuke for 2 minutes, flip fillets over, nuke for two more minutes, serve (maybe after sprinkling with lime juice or apple cider vinegar). Comes out real well that way, but I’m ready for a change.

I do something similar (minus the corn meal), but spice it up with a liberal amount of granulated garlic and Tony's mixed into the flour.

I can’t eat this fish. I once saw a documentary how people use them to eat their sewage. Shite eaters, I just could not put one bite in my mouth.
